Lactose Free Carrot Cake Oatmeal

What's the secret to perfect oatmeal? Pour a small amount of milk at the very end of cooking to make the mixture smooth and add another small splash when you're about to serve this dish!

Ingredients

  • 1 cup oatmeal
  • 2 cups Natrel 1% Lactose Free 
  • 1 large, grated carrot (about ¾ cup)
  • ¼cup dried grapes or cranberries
  • 1 teaspoon cinnamon
  • ½ cup chopped walnuts
  • 2 tablespoons maple syrup

Preparation

Over medium-low heat combine the oatmeal and milk in a medium-size saucepan. Add the grated carrots and raisins. Cook the mixture, stirring occasionally until the oatmeal is very creamy (about 10 minutes). Add a little milk, if necessary. Stir in maple syrup, cinnamon and walnuts. Divide the oatmeal into bowls and garnish with walnuts, yogurt and maple syrup.
